White Chocolate Cheesecake

Out of all of my recipes, this one is possibly my favourite pud. This is definitely a good little one to make when you want to spoil that special someone in your life (even if that person is you!).

Serves 2

Ingredients

  • 150g good quality White Chocolate
  • 250g Mascarpone
  • 6 Amaretti Biscuits
  • Vanilla Pod (Optional)
  • Fresh Fruit (Optional)

Start by melting the white chocolate. The easiest way to do this is by putting the chocolate in a bowl over a pan of boiling water. White chocolate isn't technically chocolate so won't go to that thick gooey consistency like milk chocolate would, it'll lose it's shape but stay rather thick.

Once it's reached this stage, stir in the mascarpone until it's fully incorporated. If you want something very special then why not add the seeds from a vanilla pod in at this stage.

Crush the amaretti biscuits slightly and place them in the bottom of two wine glasses. Spoon the chocolately mixture over the top of the biscuits. Chill for two hours then serve.

Feel free to add some fresh fruit to the top of the pud - I make this a lot in the summer so fresh berries or some passion fruit work really well.
