Winter Veg and Coriander Soup

2 parsnips, sweet potatoes and carrots, peeled and diced
1 handful of fresh coriander
Juice and zest of one lime
1 chilli, deseeded and finely sliced
Plenty of stock

Lightly oil the largest pan you have and add your chopped veggies. Stir well, coating in the oil.

Season well and add your lime juice and stock. Simmer on a low heat for 30 min until the veggies are tender.

Remove the pan from the heat and drain the veggies, reserving all of the stock (I find it best to place a bowl under the colander). Once the veggies are drained, blitz them in a food processor til smooth, adding the stock back in a little at a time until it is all incorporated.

Return the soup to the pan, adding the chilli, zest and coriander leaves.

Warm through and serve.
